What's the difference between Skyrim UK vs Skyrim NA?

As far as I know there is no difference, although you may not be able to activate it.

I have a Canadian version for my 360 (yeah, I feel all your judgement from here) and it's all the same, aside from some french writing on my disc.

the skyrim from america also has sexual themes and alcohol and blood gore but the UK one doesn't say it
