I like my steak cooked sous vide at 120 degrees, then quickly seared in a hot cast iron pan with a pad of butter and sliced shallots, which are then piled on top of the steak. It's comes out a perfect medium rare, and delicious. :)

I'm almost level 5 but regardless I'll answer your question because I LOVE steak. I usually eat it medium since I don't know how to say medium rare in our language lol or if there's that level but medium is fine, just rare enough and not overcooked.

Medium steak is the perfect steak for me.

Also: ocassionally if I'm at a particularly nice restaurant I'll order blue, but normally I just stick with rare. Blood is flavour 😋
