That's a beautiful cake!
I tried baking three seperate ones but they always never get soft or spongey or airy enough. Any tips or know of any good recipes?

The ground is not really airy/spongey with this one either. The sheer weight of the cheese layers pushes it down. With this recipe the real problem is not to have a soggy ground from all that cream on top. It helps if you give it more oventime than you usually would, so it gets a bit harder. The lowest layer is more like a brownie then but that is quite alright for a cheesecake.

Do you mix the batter manually with love by hand, or with a machine btw?
Your english sounds just fine, I couldn't see anything wrong with it!

I usually do that by hand to get a feeling for the batter (too tough/ too soft)

I gathered you here to celebrate my cake day. Most of you will say right now: "Who is that guy?"
Yeah, I am not really the vocal type and always busy, but at least once a year I step to the front.
This year I brought my own cake. I really did that one myself! That means you will have to work for your gibs. At least for the good ones.
