Witcher 3. Best story-telling of modern RPGs (or perhaps from all RPGs). Even if the story is not complex or if some RPG elements like progression i.e. itself are not its strength, its on story-telling that Witcher 3 shines. If you liked GTA V for its story, I'm pretty sure you'll love Witcher 3 a lot more. And cause you like Fallout as well, so you will be familiar with the RPG structure. Plus, you mainly mentioned open world games, so I can't see how this can go wrong. 7 out 10 people that play it proclaims its their favorite RPG of all time. 5 out this 7 proclaims its their favorite game of all time. From the last 3, 2 didn't like a fixed protagonist and 1 thinks Bloodborne is better for its combat.

Rage is a short but fun game you should enjoy
