Tried a few but maybe I was too grumpy (almost certainly), but didn't find anything OMFG category out of a few tries.
Toilet Chronicles was maybe the most interesting and "upfront" game. (Genuinely, give it a try!)
Potion Permit looks maybe good, but I couldn't even got to start the game ~ 10 minutes in, and I was too tired to put up with it.
Escape Academy looked interesting, but also incredibly easy.
Extra Coin looked really interesting... but I had no energy to go on playing it

Agent 64 and Anger Foot were the best of what I tried. Mortal Sin looked interesting but played boring and the neat looking graphic style wasn't as good in motion.

Loopmancer and Signalis are the two that really tickled my interest. Midnight Fight Express seemed fun but I fear it might be repetitive as a game.
Most of the demos I have tried were really not ready for demo. Not to mention the ubiquitous asset flips and shovelware demos that apparently need to be in everything Steam...
I have only played action demos so far but I have quite a few demos in the Adventure corner I want to try.

played something like 17 demos and those are the three standouts to me. a lot of the demos were poorly optimized and if i have to wait a while for something to load i'll get bored and alt-f4 out, soooo.

Hard West 2 demo was pretty impressive. As for my favourite genre, adventure games, I tired Stasis: Bone Totem demo (I'm a backer, so I've basically already got the game), was pleased that it's finally a classic puzzle-based point-and-click (loved both Stasis and Beautiful Desolation, but they were all about story, atmosphere and amazing visuals and barely had any puzzles in them), but the placeholder voiceovers were downright awful. Basically, I probably shouldn't play demo versions at all (I'm that fool that shouldn't see half-done work). So I stopped at that and didn't even try Old Skies demo, not to mention games I'm less interested in.

What's your favourite game with a demo?
For my part, I'll say Above Snakes (https://store.steampowered.com/app/1589120/Above_Snakes/), which is a Survival Crafting Open World game planned for 2023. I especially love that the player makes the map.
