I don't watch very many TV shows, so I don't have many suggestions...however:

Band of Brothers is excellent.

Lost was great. Maybe not consistently so (there were silly parts and boring parts), but the rest of it more than makes up for that.

I didn't watch it religiously, but House, M.D. was awesome.

If you like anime or are willing to give it a try, Fullmetal Alchemist is amazing. Either series, but I recommend Brotherhood if you only watch one.

Try Westworld from HBO, you definitely would say "Holy .....

Lots of great recommendations already, but I'd like to add the two recent Louie CK shows, Louie and Horace and Pete . I put off watching them for a long time, but was really blown away when I finally did.

If you liked Community, check out Cougar Town. Aside from it being a great show. they have these crossovers with Abed, which is remarkable, because they run on different networks.

If you are into fantasy stuff: I actually really liked "Shannarah Chronicles". Season 1 is free for Amazon Prime customers. Sadly there's no second season yet.

Dead Like Me.

I didn't read everything, so it may have been already posted, but: I saw recently 22.11.63 and found it really awesome. It's a one-season thing, ended, so you can watch it fully.
An older one which is one of my all-time favorites is Battlestar Galactica.
