I have completed both versions a few times and didn't experience bugs in either, though I know lots of people weren't that lucky.
To answer your question, my vote goes to the DC. The DLC is integrated into the story so the progression is smoother and you can enable the commentary if you're interested in such things.

Main difference is that Missing Link DLC is more cleanly inserted into main storyline (after leaving Hengsha for the 2nd time)
Other DLC /preorder bonuses are also now available to everyone.
There's also the reworked bossfights that give stealth-based playes a few more options, and a slightly pointless new game+ mode that carries over all augments you unlocked on a previous playthrough.

New Game+ was fun - finally played Deus Ex HR as killing machine XD
I hated that pressing Q gave me more exp than holding Q (subduing over killing, for those that use pads etc). With New Game+, I already was full or close-to full build, so I could run around and kill everyone I wanted. Turned out, DEHR is also nice shooter.

I recall a user from here explaining me that the DC went wrong in a lot of things, mostly AI and bosses fights. He told me that the bosses were incredibly easy or too OP in the DC, and that the AI was pretty stupid sometimes. I won a giveaway of the DC (thanks Densle!) in this site, and had the chance to play the game for the first time. And I really enjoyed it, even if a few bosses were really hard (specially if you go sneaky beaky like) and the last one was too easy. Playing it on Give me Deus Ex mode proved a nice challenge to me.

i played a bit of the directors cut (around 10hs) compared to the full 5 playthroughts with the original and missing link. there are some differences which aren't good or bad (first boss changes a lot) but i noticed i couldn't do something in the intro mission (zeke encounter was SUPER scripted).

thanks for all the infos! i forgot to tell that i have the original version with dlcs and afterwards got the DC cheap so i took it as well but never played both. so i dont want light/easiy games, especially DX....
DX1 was so GREAT, DX2 sucked ass, and when i saw a few vids of DX HR i was kinda pissed with all the scripted takedowns which looked too easy but read great user reviews so i wanted to finally give it a try and see if it can compete against DX1!

DC is bugged to all hells. I recommend getting the normal one (preferably Gold Edition?) and the standalone expansion Missing Link.

Director's Cut. The improved boss fights mean you don't have to do a combat build at all finally. The integration of the DLC was a nice touch too, although it makes you way too overpowered for the endgame with the additional stuff you can get there.
DX3 is a lot closer to DX1 in many aspects. Think of it like a consolification of DX1 with stuff like cover system and magical self-healing, but retaining DX1's choice of freedom in level design, and task and gameplay approach.

Sorry, no mods. You have to live with the console kiddie restrictions: after all, we don't want the little children actually have any hardships in the game, we must hold their hands and display bright, colourful neon arrows that always point to the exact location of the next cut-scene and make sure they are always immortal in a fight.
Still, DX3 is a good game. They thought about real gamers so you can disable a few of the console crutches like mission location indicators and "always shoot exactly at the crit spot" autoaim. And it is a damn fine cRPG for the time it came out and on the systems it was released on. To my knowledge most of us older gamers, who grew up on DX1, keep DX3 in high regard.

wow, this reads bad, yeah hopefully, i had all those markers and bright colours so you know YOU CAN pick this up.... jeez how crap do they think gamers are now? or are they really that bad now? i think the devs make them THIS BAD ;).
ok, i still dont like ADAM's voice, it is too harddriven to be cool ;). the soundtrack seems great though, modern electronic scifi touch. i hope i dont have to have regenhealth etc.... the quicktime kills looked too easy. well guess i just have to play and find out, i decided to play the original after reading the DC has some letdowns like AI, graphics, Story DLC which makes you overpowered etc.

Don't want to be overpowered? Put the difficulty settings at max, and try to get the pacifist and foxiest of the hounds achievement. You could also not upgrade your implants, although that's less fun.

It… actually did. Making a quasi-immortal combat build in DX was quite easy, to be honest, since with the right combination you could take about 15-20 points of damage from being hit in the face with a rocket. It was just that you had to know what kind of augmentation and skill set you were going for, whereas in DX3, with the skill and kit bonus of the DLC, you can max out almost everything by the last level.
By the way, pacifist isn't nearly as hard as people make it out to be. You can get it in the second play through with simple speedrunning. Foxiest of the hounds is a bit trickier since it is easy to botch it without realising it.

Just a heads up as I had to research this a while ago:
-Director's Cut has bugs that were fixed in the vanilla version because it was made from an older build.
-Director's Cut's Post-Processing is broken. This is the reason why the "yellow filter" is gone along with many other things when it concerns to graphics. It has issues with textures too.
-Director's Cut has performace issues and it performs notably worse than vanilla.
-Although fixes were promised the developers have gone silent since then.
You can check the official forums and Steam discussion if you want to verify this.
On the good (new):
-Slightly reworked boss fights, making them a little better.
-New Game+.
-Developer commentary. It doesn't amount to much but it is nice.
-All DLC included.
Your mileage may vary:
-The Missing Link is forced in the middle of the playthrough. There seems to be a disconnect plotwise and nothing is carried over.
-DLC weapons, items and money from Tactical Enhancement and Explosive Mission are on by default and may not be disabled (not sure about the last part).
-Game uses more disk space than vanilla with all DLC.
Some people won't mind these issues as long as the game doesn't crash-to-desktop and can be completed but the state it has been left in doesn't really make justice to a good game like this in my opinion.
I'd say get the original version and replay on DC for the documentary, bosses, and NG+.

I own both the original with all DLC and the Director's Cut. Both are pretty good, although DC did indeed inherit a few bugs that were fixed in a patch to the original game, but nothing gamebreaking in my experience. With a better integration of the DLC's, higher res cutscenes and the (slightly) reworked bossfights, it's pretty fun. NewGame+ is nice, and developer commentary is quite expansive if that sort of thing is interesting to you. I wouldn't recommend activating that one on a first playthrough since it breaks your immersion (say goodbye to mr. Wally McFourth) but it's fun on a rerun.
Anyway, in both versions there's issues, DC has slightly more issues but I find that the improvements more than make up for it. Add to that it's gonna be harder to track down a version of the original with steam no longer selling it, in my opinion it's not worth the effort, so just go with the one that's easy to get.

one thing, ijust wanted to start the ORIGINAL version and disabled both dlcs, cause it seems also the Explosion pack gives u advantages with its features? (i hate such crap dlcs... throws all the balance away)

If you're a stealth player, which "I'm an old DX1 guy" suggests, you won't even use the items that are added by the DLC, so you don't have to care about balance being disturbed.
They give you explosives and stuff, nothing forces you tu use them. You can even drop them on the floor.
