The answer is 5 letters long. You get one letter from each of the 5 groups.

I got 5th, and everytime when I think I got another one, there is always t least one word that doesnt match

You use similar methods for each of the five groups, so it needs to work for all of them.
Your approach was not too far off.
The solution is a proper word, not random letters, but its meaning is not significant to the puzzle.

solution:
Each of the words in each of the groups can be turned into other words by appending a letter to the front. e.g. f-unfair, f-lowering, g-host, u-sing
This gives the letters F-U-D-G-E so the answer is "fudge."
