Hardest imo would be Contra aka Gryzor old school game in the arcade or C64. Never could get past like level 3 or 4 due to the difficulty. This was in the old days where a lot of games could only be beat with the old infinite lives cheat and even then was hard as nails.

The hardest would probably be what little I played of Getting Over It. That was just unfair.
The easiest would have to be The Stanley Parable. Still one of my favorite games out there regardless.

I don't recall any specific easy game(I think I play too many easy ones) but the hardest one(at least to complete) wasThe End Is Nigh.
Also Elex is sitting in my wishlist for quite a long. Do you think it's worth it?

Resident evil 6 on the hardest difficulty was even hard in coop because if you got hit by a shot you would fall down and the ammo/item drops are random wich means you may not get almost any items/ammo and have to fight tens if not hundreds enemies with ranged weaponary AND they might transform into monsters before dying wich means more ammo needed.
Easiest no walk sim/novel game? No idea. So many easy games out there. I guess the 2 newer tomb raider games where piss easy on hardest.

I like this list. This is close to how I think about games. I wish that I could categorize my games into a complete way that I intuitively understand.

I actually beat Myst on my own as a kid, without any guide, just through trial and error.
And I think I only got stuck in The Longest Journey twice, once at the very beginning and once in the middle on something silly. It's a fantastic game, and still one of my favorite point & click adventure games ever.

I don't remember which game was the easiest from a mechanical standpoint. I guess it was a visual novel or a very basic point and click game.
The hardest, meaning the one I have tried the most times was probably Dark Souls. That game is all about mastery.
But it seems like you have a different perspective on what hard is. What's the point of playing something that's frustrating without providing a reward?

Not counting visual novels, hidden object games, Spoiler Alert was one of the easiest games I played. It wasn't too good to begin with, but at least it was short.
Easier than expected: Dust: An Elysial Tail (This can be buffed up nicely by not putting any points on defense :3 ) or The Darkness 2.
Hardest - idk. Super Meat Boy, Dark Souls, one of the usuals.

That's a pretty broad and subjective question. What exactly does define a "hard" game, after all?
Plus different games tend to challenge different aspects- hand-eye coordination (action games in general), reflexes (again, action games), strategic thinking (strategy games, obviously, but also most games in general where you have to outwit any kind of opponent), knowledge or "talent" in a particular subject (for example I'd imagine people with a lot of engineering knowledge probably have an easier time in SpaceChem), probabilistic risk assessment (XCOM: Enemy Unknown, Darkest Dungeon, games where you don't always know the outcome of an action), just plain stubbornness (grind fests, moon-logic puzzle games and games that overdose on the randomness cough The Binding of Isaac cough), and lots of other stuff...
It really depends on which of those aspects people personally find to define "hard' games and which are just annoying. (For example I find too much randomness to the point of making your actions almost irrelevant annoying but since I'm stubborn it's not exactly "hard"... it's just really annoying.) XD
So, yeah, I guess I personally consider most Bullet Hell games to be insanely hard (almost impossible) on their highest difficulty. Maybe with enough time you can learn all the patterns, nail down the strategy to deal with them and actually manage to pull it off. I don't think I have the superhuman abilities needed to do all of those though. (And I guess to narrow it down a bit- Hitogata Happa is the only Bullet Hell game so far where I didn't even manage to beat it on what goes for "Hard" difficulty... no that is not the highest difficulty in it. :D )
And I guess SpaceChem gets a(nother) honorable mention since even if it's hard because I just suck at engineering, it's a fun kind of hard.
(As for "Easiest" game I've ever played... all the rest that don't bother trying to be challenging at all. There is no "Easiest" game... there are just "easy" games. ^_^' )

SpaceChem... I love this game. And I want to enjoy it more, but I got to the point where the puzzles were simply too mind-melting. I don't want to think how complicated it gets later. But it's such a good game. I want to try all the other Zachtronics games one day, but I believe they all get just as difficult.

Easiest game (IE Easy game I played lately) Mass Effect Andromeda on Easy mode. I was struggling with the Architect (I know I'm a bad gamer!) so I switched to easy, but it was....too easy, everything dies like instantly on easy.
Hardest: Cuphead, for me. I just couldn't adjust to it. I have trouble with my reflexes and I just couldn't get used to the speed of the movement. After trying for a little while, I gave up. XD

Ooh, easy pick for hardest - The Last V8 and China Miner on the C64. Actually at the time I thought there might be something wrong with my, umm, "unofficial" copy of V8 as it was so ridiculous. China Miner was a very difficult platform game inspired by Manic Miner and developed by Interceptor Software ergo, as visible in longplays, slagging off Jeff Minter on almost every screen for some reason known only to Interceptor Software (and possibly Jeff Minter).
Longplay videos don't really show the crazy but I found two reviews which reflect the actual experience.

the hardest game I ever played was Wizardry 4. You're basically the villain from Wizardry 1, trapped in a dungeon and powerless.
You start in a 2x2 room with no doors. If you're able to escape (many people have given up) you're on the bottom of a dungeon. You keep running into parties of adventurers (real parties from broken disks sent to the publisher) who do their utmost to kill you. Oh, but you can't wear any armor. There's also a ghost floating around that will insta-kill you. It's extremely difficult to even make it out of the first level. I never got past the second.

Easiest (not counting things you can't die in) was probably some Kirby game.
Hardest: I don't know if it was really the hardest or not but Super Ghouls n Ghosts. I was young at the time, and it took me years to get to the end of the game. Only to find out that's not the end, you have to play through a second time with things even harder to win. I never did successfully do that.

When I think of difficult games, the first one that came to mind was Jak and Daxter with its annoying jumping sequences.
That game is the primary reason I dislike most platformers since (but it's mostly because I'm terrible at platformers).
For pure difficulty, though -- Super Meat Boy.

So I did a topic like this two years ago. So I think it's high time we did it again since I'm sure we have added to this since then. So instead of necrobumping, I thought it would be easier to make a new topic. Keep in mind that life is the one game, except the board game, that can not be included since it truly is the hardest game ever played. NOBODY can win that game. :P
Easiest game I ever played might have to be Final Fantasy 7. Too easy and such. Never had one character ever die.
Hardest, and I know you will laugh at me, but currently Elex. Annoying AI, bad combat system. Only thing going for it is the story is good.
So, what do you guys have to add in?
