When a giveaway ends, the key is not sent automatically by the site unless the giveaway is for 50 copies or more. The giveaway creator has to manually click a button to send the key. This gives them a chance to look over the winner to see if there is a valid reason to request a new winner. The giveaway creator has 7 days to send you the game. They can send it through the site and it will show on your won giveaways page, they can email it to the email address you registered on steamgifts with, or they may add you on Steam and send it directly.

Edit: Also, once the giveaway creator sends the key, the giveaway won notification on the top of the page should start flashing to let you know. I think it flashes whenever you have a won giveaway that is marked as sent by the giveaway creator, but you have not marked it as received yet.
