I was just wondering with the new humble-bundle pack out (The Humble Weekly Sale: Tripwire), if I pay $1 and recieve the games that are below average, and then later increase my order amount over the "Beat-the-average" will I receive the Killing Floor Bundle?

Yes, you can. Just increase the amount on your keypage that they give you after your first purchase.
