They're not potatoes, but dumplings :D

And I'd say they're from Silesia, as they have these small holes in them :D

it's kluskie. So, basically the ingredients are: 1. potatoes and 2: potatoe floor.
It's very likely that they are from Silesia, I couldn't say.

Yup, they're made from mashed potatoes and potato starch. Funny thing is that it looks like it's so simple thing to do (just 2 ingredients, sometimes it's enough to use just potatoes, when they have lots of starch on their own), but sometimes they can be really hard to eat, when potatoes were "bad" on their own and you have these nasty, hard pieces inside. Or fiber xD

But they're way better when you add a little milk to them : )

You can also try to make "dark kluski". They're the same as normnal ones, but at the end add raw potatoes (grated really hard and you get rid of their juice). They taste slightly different and aren't yellow, but grayish.

My mum makes few of them at family gatherings, as my uncle likes dark variant more. She just take small portion of this potatoe mass (made from potatoes and potatoe starch) and add like 0,5 raw potato.

so basically, after the potatoes are cooked, smashed and mixed with the potato starch, grate another potato over them, and then make the kluskie shape? is that it or am I understanding it the wrong way?

You have to get rid of water from raw potatoes, otherwise dough will be watery. So grate them into some kind of colander, squish a little and let water fell down like here. (She's making them with sauerkraut, that's why she's adding cabbage next). Leave them a little, so they will change colour into grayish, and then add to cooked potatoes. After that you can throw out water. There is chance that there will be some potatoe starch under the water, you can add it to mashed potatoes as well.

Original recipe is like 1:1 cooked:raw potatoes, but you can use 7:3 propotion. Kluski won't be so dark that way.

But to just try them, I'd take small amount of cooked potatoes (out of whole dough mass) and mix with similar amount of raw potatoes. That way if you won't like them, you won't have to throw ouot your whole dinner :D
