Not giving it away as a gift. Only trading it.
Once you purchase it and store it in your inventory, you can send it as gift at any time.

You have to wait to TRADE it. But you can ALWAYS gift them to someone else. Just note that your Steam email is revealed when you send it to someone on your friend's list or via email that way.

So what I recommend is if you're gifting something to someone you don't trust with your Steam email, email the gift to yourself and then pass them the link in your email (it'll look something like steam.blahblah.(com)/gift/123ABC/ack?=redeemer="youremailhere" without all of the bad formatting) and you would just send them steam.blahblah.(com)/gift/123ABC/ack? <--up to the question mark or so instead. Now you gifted someone something without revealing your email!

And that's about it.
