I currently have 3 giveaways running and have not used this site much before.

When I created the giveaways, I was asked to put the key into a textbox and I did so.

But what happens when somebody wins? Does it give them the key automatically or do I have to e-mail it to them?

Sorry for being a noob but I'm just confused about this.

When a giveaway ends, you will be notified, and there will be a button for sending the key to the winner. When you click it, it will be sent to them. No need to email

By the way, I know re-gifting is bad, and I would never do it, but is it literally against the rules?

And what happens if someone enters 2 giveaways of the same game and wins both of them? What would they do with the spare key? Would they give it to their friend? Are they allowed to re-gift it? Or is it literally impossible for that to happen?

Yes, it is literally against the rules. (Games should be activated on the winning account, not regifted/sold - something like this in FAQ)
If one wins a game 2 times he/she have to decline one of the two - it's up to him, or the second giveaway's creator to notice it and ask for a reroll. As long as the winner won't claim and mark received both keys, it's not against rules.
(This can/should only happen in a short time window, as weekly? SG re-synchonizes itself with Steam, and doesn't let you enter for games you own)

Yes

Won gifts should be activated to the Steam account used during registration, and they should not be regifted, traded, or sold

Mulitple wins of a game are also against the rules and can get you suspended as well.
It if occurs, activate whichever copy you receive first, and tell the creator of the other giveaway to request a new winner (you can do so by leaving a comment on their giveaway).

So when someone wins a giveaway, the creator has to click a button to confirm that they want to send the key and then the winner has to confirm the key? Is that right?

If by confirm the key you mean clicking a button to reveal the key, no, there is unfortunately no such system in place currenty.
Once the creator press the "Send key" button, the key is visible to the winner, which means that if they have to request a new winner, they can't be completely sure that the key hasn't been used.
