I mostly use the Blutsauger, the Ubersaw and either the Medigun or the Kritzkrieg.
PS: Don't use the Quick-Fix, it's the worst of all mediguns.

I use those secondary and melee weapons because I often enter combat. They are the best, in my opinion, for killing ze baby men. Building up an uber with hits on the ubersaw and adding health with the blutsauger hits is a really convenient combo as a medic.

That Grimme Hatte with the Deus Specs and a scarf is my favorite Medic look :)
Foppish Physician's a good alternate if you can't get a scarf.

I normally don't carry the Quick Fix -- usually the stock Uber, but Quick Fix's backpack looked better for this shot. Kritzkrieg is the usual alternative -- depends on whether the Uber is needed to make a good push. Uber for Offense, Kritz for defense... generally speaking, and assuming your Pyro teammates know what they're doing on D.
I like the Crusader's Crossbow, but I have good aim with it -- Blutsauger would be my usual recommendation.
Melee is pretty nearly always Amputator. Unless I'm on a mutual Uber/Melee run with another medic, which requires the Ubersaw.
Scout: Sandman, Bonk, and any of the primaries. FaN if you need the triple jump.
Soldier: Equalizer or Escape Plan, Buff Banner, and stock Rocket Launcer or Direct Hit (latter takes some learning to use well)
Pyro: lots of melee options... Axtinguisher, Homewrecker are probably my most-used. Flare gun, and any of the primaries, depending on the vibe you want.
Demo: too many options... either hilarious charge in and melee or good sticky bombing. Also, I think people under-use the Scottish Resistance.
Heavy: boxing gloves of any sort or bear claws, Fists of Steel are very strategic on cart-pushing maps. Sandvich. And whatever you feel like for primary.
Engineer (my main): Southern Hospitality, Wrangler, and either stock shotty or Frontier Justice normally. Gunslinger's a fun alternate melee.
Sniper (I can't snipe): Tribalman's Shiv, Jarate, Huntsman (aggressive play, do not sit back and snipe, tops scoreboards regularly)
Spy: Stock or Eternal Reward knife, any of the three watches, depending on skill, preference, and requirements of patience, and Ambassador.
(Also, I don't play regularly anymore, so I'm not well-versed in the newer weapons (Sleeping Dogs update and after).)

For the solider I use:

For Scout there are some nice sets. Shortstop + Mad Milk + Holy Mackerel + Milkman is a good all-round fighting combo. Soda Popper + Winger + Atomizer + Bonk Boy is a good alternative that makes you more more lethal if you're a good twitch-player. But those need refined metal for hats, and you miss out on Bonk!, which is very useful sometimes. I often go with (Shortstop or Soda Popper) + Bonk! + (Boston Basher, Sandman or Mackerel). This is also good for mvm, except here I prefer the Atomizer.
For Engi I go stock everything, but with a Southern Hospitality or sometimes Gunslinger if the situation warrants it. For mvm the perfect Engi loadout is Widowmaker + Wrangler + Southern Hospitality.
For Pyro I like stock Flamethrower + Flare Gun + Homewrecker. It's a wonderful combination for protecting your team against a variety of defense-cracking tactics. The drawback is that it leaves you a bit vulnerable against shotgun-pyros.

Maybe not all, but most of defaul items are better than normal (excepf for items like kritzkrieg, what playing manner). After years of playing I began to notice it. Of course, im not playing only with default items, because there is a fun with changing loadout, but the basics are more useful.

As for viability, in most cases it is true, with a few exceptions here and there but generally stocks are the best choice.

Spy:
The "Silent Decloak" Set, one of the items is the Familiar Fez.

Works great for capping any point especially on the last point of Gravel Pit, not great otherwise though.

A fun thing to do with medic is use the medieval medic set + quick-fix.
Heal a scout and go capture the flag. This way, you have more life and life regeneration with scout speed.
And your pocket scout can shoot and is being healed, so it is a good combination.

So ive been playing Team Fortress 2 for a bit now (+200h) and I recently started playing as the Medic :D
Its actually pretty fun !
Im looking for some cool loadouts to try out , my current one is :
Primary - Overdose
Secondary - QuickFix
Melee - Amputator
While wearing my (not so) awesome hat, the Grimm Hatte :D
