Game of Thrones!

Regular Show. Starts off mundane-to-slightly-weird, suddenly escalates and ends up completely insane... and that's for every episode individually.
And as I just found out, they announced last year that they're reviving the show for two more seasons! :D

I still throw Workaholics on my Plex to shuffle. It's just one of those shows I can watch every episode.

the original Twin Peaks. Still haven't found any media that can replicate the feeling of the Twin Peaks town. The Deadly Premonition and Alan Wake is the closest I've found. Do anyone have any more examples?

A lot of good shows here, I see no one has mentioned Dark. Enjoyed it quite a bit.

I gotta agree with the wire, breaking bad (with better call saul), but one I haven't seen mentioned is a mini-series Band of Brothers. Absolutely destroys everything else. Not technically a tv show, but it was on tv.
