Hi there ^^

I just realised that if we have a community from all over the world there must be people in here who can cook. As i really like to cook and try different recipes, i thought, maybe you can

a) tell me your favorite food (if possible from your country/region)
b) give me a recipe for it

That would be really awesome. Sure you can look on the net for some "original" recipes for this and that, but asking someone who lives where it comes from how he makes and what he uses as ingredients - that´s just soooo much better.

And now for the thing you really came here:

As I promised, here's a recipe for a traditional Tatar dish - Ochpochmak.
Everyone makes them differently and each family has it's own recipe, so I will share with the most common and traditional one :)

Traditional Tatar dough:

For 1 kg of dough (you can make about 10-11 ochpochmaks from 1 kg of dough):

  • 500-700 g of flour;
  • 200-250 g of water or milk;
  • 30 g of sugar;
  • 100 g butter;
  • 2 eggs;
  • a pinch of salt.

Pour water or milk into a bowl, add sugar, salt, eggs, butter and mix thoroughly. Add flour and knead the dough until it doesn't stick to your hands and bowl. You can use the dough right away.

For the filling:

  • 750 g of beef;
  • 850 g of potatoes;
  • 200 g of onions;
  • salt and pepper.
  1. Chop the beef and potatoes into little 0,5x0,5 cm cubes.
  2. Chop onions.
  3. Add everything to the bowl, add salt and pepper according to your taste.

Ochpochmak:

  1. Make dough balls of about 90-100 g and roll them to the size of a saucer.
  2. Add about 150 g of filling on top of the dough and start sticking the edges to each other to form a triangle: [1] - [2] - [3] - [4] - [5]
    Don't forget to leave a little hole on top. We'll need it later.
  3. Put ochpochmaks on the oiled pan and put it in the oven.
  4. Take out the pan after 30 min, add some bouillon or a little piece of butter into the ochpochmaks, oil them with melted butter and put back in the oven for another 20-30 minutes.
  5. Ochpochmaks are ready!

Traditionally they are served with a bowl of bouillon and/or a cup of hot tea.
