EDIT. So it's impossible to check who has redeemed it. Unless HB Support told You but I doubt they would do that.
It's actually impossible if You are referring to GIFTlink (starting with: "https://www.humblebundle.com/?gift="). As @Nino2mg said You will see a Steam profile name of the account that game was added to while using "https://www.humblebundle.com/?key" link.

the link given ended with "key" as per your second example but it still came up with the picture I posted without any steam profile linked.. =(
