Some challenges are easier, than others. Mining and gathering are easy for me.

Yea, I don't seem to be able to beat any of them. I know they are supposed to be difficult, but some of them just seem impossible (like the Sickling and Hoeing that require 60 in 60 seconds)
After I complained in the comment above I tried to Google it to see if there are any tricks. Other than planning your route before starting, and going for the right items (ex: small tress, non-spiky saplings, etc.), it seems you can't mess up at all or you lose.
This guy has videos up that I think are helpful, I'm just not sure the effort of winning is worth the time or rewards (especially if I were to win and get a DLC or dupe key)

Hoeing can be won in the shortest time in fact even though it's among the harder ones to learn. And winning the first key has been made a lot easier lately. Hoeing can be done in 30 seconds for example if you haven't won a key that day yet. Easiest to learn are probably woodcutting and rock crushing.
If the character movement seems sluggish you might be lagging. Switch to Firefox as the challenges run better on that than on Chrome. Not playing in full window mode improves performance, too.

Thanks for the advice. I was able to win a few with some persistence, though I haven't been able to win while having malus yet.
