Different games for different stuff, but in general:

Gothic 1/2. - the feeling of exploration, a living world, having to orient yourself on the map (or just try to remember it), being a nobody in a prison colony... Those games did things 20 years ago, that many high budget games today can't do properly.
Gothic 3 for one of the best soundtracks ever regardless of medium.
Planescape: Torment - that one hit me hard.
Baldur's Gate 2.
Heroes of Might and Magic III, (which is even better with HoTA mod - essentially vanilla +)
Flatout: Ultimate Carnage - crazy fun, my buddy would come over and we'd wreck shit with a Flatmobile. (WOTKINS - I actually remember the cheatcode haha)
Witcher games.
TESV - Skyrim is a lot of fun with mods.

Some throwbacks I just remembered:
Nox - I used to love that game as a kid, played it with all 3 classes numerous times.
Age of Wonders, fun times for 6 year old me.

As a kid my favorite was Final Fantasy VIII and i still love that game.
Now as an adult is hard to answer because i haven't played many AAA games that i want to try, from those i have played maybe Bioshock or Dishonored.

Damocles: Mercenary II. That game is astonishing. It gives you a solar system filled with places to explore and secrets to find in first-person 3D, all in a single disk load on a humble Atari ST.

I'll probably go with any of the Zup! games right now because of the variety in difficulty with each level so you'll have a couple difficult levels before one that basically plays itself as a little satisfying break in between the hard levels. The achievements also feel very nice, although a majority of people would look at it as an achievement spam, it does wonders at providing my brain incentive to keep playing and they are nice for designing my profile so I really adore them.
