This was the first time I had guanciale, and it's definitely different from bacon. It's more savory and less salty than bacon. Is it worth the 5x price difference? Hard to say.

and is not that different, here in Italy. so we usually opt for the cheap "pancetta".
also, Guanciale comes from Amatrice (very hardly hit by the last earthquake) so price has gone a little up. they say that "pasta alla amatriciana" derived from this simpler "pasta alla Gricia" (also called as "white amatriciana", cause is missing the tomato) and guess what, they both were very poor and humble plates...
