With the limited options available, I'll go for old Joseph from Stardust Crusaders. Even though he's no longer the main character by that point, he is an awesome old man.

Real talk: Not including the non-animated Jojos doesn't really help people since people voting for the manga Jojos will just get anime-only peeps more excited for future parts. Seriously, it keeps getting better. Plus they're still Jojos dammit!
Ex (Spoiler free): My personal favorite's Johnny Joestar since the author somehow took a guy who can't even walk and made him work as a main character in an action manga. The way he not only gets around this limitation, but uses it for the benefit of the story's tension is simply amazing.
Outside of that, Joseph just because I dig the sarcastic asshole protagonist niche he has going for him.
