Been in Amsterdam twice. Definitely one of my favorite places. The architecture is beautiful and it offers you so much to do. Got most of my tattos done there as well.
I only have bad advice, like try some of the stuff there that is legal. Drugs are bad, m'kay? They are totally not. And after you've been to a headshop and... uh, avoided the devil's temptation you can go to the Vondelpark, lay down and look at the sky. :P
I couldn't find which pancake house we've been to, but there are several anyway. The place we've been to had its kitchen downstairs, completely open, with some tables and a balcony-like floor above. Really small place, but tasty bacon pancakes!
Otherwise I can only recommend some clothing stores, don't know if you're into that. Amsterdam has everything you can wish for in that regard.

Depends on the style of tattoo you want to get. The shop I've been to has several artists, two of which done work on me. One of my tattoos even made it to the artist's online portfolio. B)
You can check their website to see what they're work is like. Edu definitely being my favorite..
If you love shopping Amsterdam won't disappoint you! I can highly recommend Tenue de Nimes, 290 SQM and Baskèts, but the last time I've been there I had a job and no financial responsibilites, sooo... yeah... They're expensive. Still nice to just take a look, since the stores are really good looking and in Tenue de Nimes they offer you a drink anyway, no matter if buy something or not. So if you want to grab a free Heineken or a glass of wine... :>
Niiiiiiiiiiice! My fanboi hype works! Got it as a birthday present for someone and another friend got it as well. Some are considering it. I am glad the Gungeon love is being spread. Hope it won't disappoint you. :)
Edit: Oh and a friend of mine got a tattoo somewhat recently in Amsterdam which looked really good. Can't remember who did it tho. But it seems like Amsterdam has a lot of great artists!

I've been to Amsterdam a few years ago and stayed in the youth hostel in Vondelpark. I even saw the queen when she came out of a Gallery to hold a speech on Dam square because some wacko drove his car into a farmers market if I remember correctly.
I recommend to get an I Amsterdam card because you'll get a booklet with most of the interesting locations, free use of all public transport, a boatride plus lots of discounts on other stuff. Just considering the public transport and the boatride it pretty much pays for itself. Some of the things I liked best were the Science Center NEMO in the harbor, which also has a cafe with a great view on the rooftop, the Van Gogh Museum and the National Art Gallery. About the coffee beans... in case you're not used to that kind of stuff you might wanna start out with a brownie. Just don't make the Eurotrip mistake and make sure that it's actually a coffee shop and not a jamaican bakery ;) I personally didn't have any problems at all but maybe don't go through the redlight discrict completly wasted at night. There are lots of free tours, which are pretty decent, that start at Dam square and also one for the redlight district.

It's microbiology museum and it's awesome! Well at least when you're interested in microbiology like me xD
You can see bunch of stuff under a microscope, see how microbiology lab looks like, play in some interacrive games, learn about save use of antibiotics and so on. And you walk with special card and mark everything you saw:
