Id say TF2 is probably the best option to start, but in my case and i think is the case for lots of other users it wont be playable becouse of lag. SGs community is really international, FPS are unplayable on foreign servers, so i dont know.

CS:S Zombie Horde - It was long dead but has now been revived. It's a mod where Ts are zombies and CTs "the usual good", teams are even. Zombies use knife and CTs usually defend themselves with a shotgun + a grenade in extreme situations. CTs' health is normally 100 and zombies' 700-800 while they regen 20 health each second and they only take damage from headshots. The trick is that zombies use bunny hop and good bhoppers are very deadly. Teamplay is essential.

Terraria, CSS GunGame and public, Minecraft and maybe Killing Floor.

Honestly? With Loko stepping down, it'd be really awesome if efforts were focused on getting the support queue under control. My two cents.

I think the most popular would be Minecraft, Terraria, CSS, Killing Floor (I would love to have), and maybe a Quake 3 server (if this happened I would never sleep).

It really depends if u intend to work on the servers or not. Also, It has to be unique. Not just another one in the bunch cuz we could just join another server then. Like CS:GO surf or TF2 with some AWESOME mods would be fun.

I'd like to add Call of Duty: Modern Warfare 1 to the already mentioned ones. That one still had dedicated servers and is still a lot fun to play!

Hmm, CS 1.6 servers are pretty populair though.

Sounds like a great idea. How would the server locations work out though? You either have one location per game and some people won't play because high ping, some people will but they will lag a lot. And if you have multiple location it kinda 'splits' the community :P
Also it sounds like it can get quite expensive with multiple games/multiple locations.

I'm not sure if there's any point for games that already have plenty of dedicated servers.
Would there be EU servers, though? Overseas latency is a killer for most games. KF is surprisingly playable with 100-200 latency, which is odd really for an FPS. Minecraft on the other hand is completely unplayable (last time I tried). L4D(2) is out too with >100 latency, as is every other FPS besides KF that I can think of.
