If you're looking for gaming check out PeanutButterGamer. He does a lot of lists and reviews/let's plays of random games that are always hilarious. He's the only youtube gamer I really care about because his stuff is always hilarious and 99% of the time he's clean.
My favorite youtuber is Olan Rogers. He makes sketches, vlogs, and an ongoing film series. He's super hard-working and super underrated but he's finally starting to get noticed more. Check out his most famous video, Ghost in the Stalls. :)

I know you said it doesn't have to be about games, but I'm just going to list the ONLY gaming channel I follow: Hey Ash, Watchya Playin', despite the name it's NOT a "Let's Play", it's a skit based show with the Ashly Burch (voice of Tiny Tina) and Anthony Burch (writer for Gearbox, I believe)

I could shamelessly promote my own channel, but seeing as how I haven't been active on it in a while, I'd rather not >__>... Plus, aside from a few projects, I'm not super proud of my older work. :P
Cory Williams has been doing the youtube stuff for like...10 years? (The guy from The Mean Kitty song). He started doing daily/semi-daily vlogs about his life a few years back, and is really the only "life-vlogger" I'd personally recommend. He lives in Alaska now, and has had some really interesting adventures (including capturing the Iditarod)
LoadingReadyRun is also a channel that is definitely worth checking out. They are a primarily a canadian sketch comedy troupe, but they also do all sorts of gaming-related stuff, such as D&D and Magic. In addition to that and the random skits, they also have two types of weekly news segments. Feedump (bizarre news), and Checkpoint+ (gaming news).
They also have a twitch page where a majority of their members do their own individual streams. Personally, I'd suggest the "Beej's Backlog", "House of Stark", "GPLP", "Watch and Pray", and "Crossing the Streams". And in case you ever miss their shows, they (slowly) post the archives on a separate youtube channel.
You may, or may not have heard of these guys from their annual charity event, Desert Bus. where they sit in a chair for a week, nonstop (switching out "drivers" every 8+ hours), while everyone else in the room does random stuff (giveaways, skits, songs, stories, etc.) to entertain the audience (last year raising $643K).
Boogie2988 is sweet guy who does a lot of commentary over gaming-related news. Sometimes via his character, "Francis", which can be best described as an overly-annoying, but sometimes funny, parody of gamers.
Also, while you may not be looking for LPers, I still wanna suggest my favorite playthrougher, OverTheGun. He's a funny British dude who has been going at it for about 7 years, and despite a few long disappearances, has a lot of quality content. He does swears a lot though, so might not be for everyone. He also has his own TVTropes page that is worth checking out, if you want more info on the guy first.

May I suggest Helloween4545? He's a LP veteran from Penny Arcade, plays good games of mostly horror or disturbance. I'm not giving a link because I'm lazy and don't know how to do it.

LobosJr He made really crazy Dark Souls runs, like only shield, only fist, laddle. He plays other games too. I think since this year he went fulltime streamer on twitch.
Epicnamebro Videos about the Soul Series too. He got some really good Lore Videos.

Retsupurae is like MST3K for video games. They mostly watch and riff on longplays of weird or bad games. Light naughty language.
Lowtax mostly plays and makes fun of bad Gamemaker games. Moderate amount of naughty language.
Chip and Ironicus do some good LPs and have also riffed on a few things, including old animes.
Jeremy Jahns does lots of movie reviews. He's pretty funny and has very good production quality.
Finally, if you're familiar with the Yu-Gi-Oh! anime, watch Yugioh Abridged. It's arguably some of the funniest stuff on the internet.
P.S. Shameful plug for my own channel, where my brother and I kinda riff on adventure games. Only 5 videos right now, but there's about 4 and a half hours of content.
