How do I not have this. Is it a rip off of the current Disney Star Wars plot line or is it the inspiration? Does Disney own the rights to every Star Wars everything, ever? I guess so, since they bought LucasArts.

It's from 1998. Disney acquired LucasFilm and with it LucasArts in 2012, obtaining all the rights related to its Star Wars games.
This game is marked as reduced value, but I don't think it's been in a Humble Bundle, which is where I picked up the other games in the Jedi Knight series. Steam has a complete-your-collection style bundle and the Lunar New Year sale is coming up very soon, if you don't want to rely on luck for a copy.
