I was really involved 10~15 years ago (I was in a fansub team) but I haven't been following new stuff for a while. I think the most recent anime I've watched was shingeki no kyojin, so...
Edit : In your "plan to watch" list. Definitely watch Hellsing, Neon Genesis Evangelion (you haven't watched it already, really??), monster (though the manga is better) and Trigun.
And if you like funny animes, you have to watch Cromartie High School, Excel Saga, Ippatsu Kikimusume (a bit fan service but the situations are so stupid it's hilarious), Ping Pong Club, Sexy Commando...
