Don't know if it counts as a proper "simulator" but My Summer Car is my favourite... mechanic/local town's idiot simulator.
Drive Beyond Horizon is (somehow) even more rough and has less content, but it's coop so you can mess around with friends.

Does Crusader Kings series count as inbreeding simulator?

I mostly stick to ETS2, chilling out and driving around just does it for me.

PowerWash Simulator is my favorite sim, but the kids are fond of Goat Sim so much I have to get the sequel to appease them :)

I'll say career/jobs ones, they are like a window to the industry and how stuff works behind the curtain, even if it is in a unrealistic manner (otherwise it will feel like a real job instead of a game).
Altho I try to avoid the playway games now with how copy/pasted they feel

Driving sims, like ETS2

I enjoy ETS2, very relaxing game.

I think the one simulator game I enjoyed playing the most was the Powerwash Simulator. It's just so satisfying to clean stuff by shooting water at it, even if it's not very simulatorey (it doesn't account for the runoff, the streaks, the surface damage and many more things)

theHunter is a good balance between being calming and just enough satisfaction of actively hunting an animal.

Tabletop simulator for me

Simulators used to be my least favourite genre, but now Euro/American Truck Simulators are among my most played games. I guess it's a type of game where realism is of utmost importance, and in the '80s/'90s the graphics were just too far off.

Hospital or Truck

I'm going to say ridiculous ones. But.... I did put countless hours into Trackmania years ago so driving sims are up there as well. I used to just drive around in GTA and Mafia between missions enjoying messing around with things.

Card Shop Simulator Multiplayer, and Tabletop Simulator are my two favorites of the genre... Although with Tabletop Simulator it's just really nice being able to play board games with buddies again. xD

It has been a while but out of all the simulators i have spent time in i think it was Theme Park on the SNES or Sim city on the pc probably Gangsters± organized Crime besides those i have enjoyed quite a bit of the Sims 2 , Euro truck 2 and City Skylines.

I was just thinking about this. And also the "target markets" for simulators.
It seems that people like to come home from work after driving a train - and play rail simulators.
there are more farmers playing farm simulators.
That's crazy. the second highest seems to be people who are are curious about specific occupations and "joke" occupations like Drug dealer simulator - or at least I hope people are playing them "4 te LuLZ"
This led me to think about people who play 911 operator simulators. brrrrr why?
Me? Goats, Dungeon Keepers and - are the EXPEDITIONS games and TOTAL WAR simulators?

"Cultist Simulator" (muhaha) Oh, and "Death Stranding". :D
If we talk about types, hmm, I haven't noticed a pattern in this genre. Rather, there are some specific titles that I liked (for example, the second part of Goat was quite funny and I liked it). Of the recent ones that I tried (for all achievements), I liked "Little Kitty, Big City".
