The original Sonic games had some awesome tracks. I also liked the Sly Coopers games, Brutal Legend (both by the same composer I think), Bioshock, Kirby's Epic Yarn, Plants vs Zombies, and the two Portal games.

The N3 (Ninety-Nine Nights) soundtrack was pretty cool. So was the soundtrack in Monster Hunter (1), The Elder Scrolls series, every god damn Star Wars game, LotRO. This list could go on forever. :D

Soul Reaver 1 has the most amazing soundtrack I ever heard. To this day I have 5 songs on my Winamp playlist.
Unreal 1 and Mirror's Edge were pretty nice too back in the days. It's actually all I can think of from hundred's of games I played.
