You misunderstand. The correct cheese for pizza is mozzarella. In Germany, Italian restaurants have conformed to the German preference for Emmentaler.

In my part of germany, the southwest, is moz. the normal cheese for pizza.

Flammkuchen isn't a pizza!
But taste great :o)
A thin dough, creme fraiche, bacon, onions, spices, thats it.
It give, of course, other version too, veggie ones with leek as example but they aren't the same.

Besides the fact that it came to us from france, near the border to germany.
All the back and forth with the conquering of territory in the WorldWars brought us this mix.
I live very near to the french and switzerland border and we have a lot of food stuff from there and from austria because we were a part of them in the, longer ago, past.

Has to be dependent on the region you're living. Italian Mafia Clans are heavily invested in Pizzerias for laundering money and dealing drugs where I live (and they're making pretty good pizza).
