Catapult. In Medieval Total War 1, the trebuchet is powerful, but cannot rotate, making it essentially useless if you can't get it aimed just right.
The catapult, however, can rotate. It reloads quicker and delivers less damage per shot than the trebuchet, but overall it might do more good for your side than the trebuchets do.

Catapults are OK but they require you to be closer to the castle walls and yes they are more mobile but also they can't shoot as heavy and big projectiles as trebuchets.

Also trebuchets not only fire bigger and heavier projectiles but also that projectiles are moving faster so when they hit they do more damage to the castle walls.

Also trebuchets are vastly superior to catapults because they were invented after catapults, so they have superior technology and design in general perfected by warfare.

Trebuchet for me, such elegant siege weapon with better charasteristics, catapult looks like a spoon. I want to rewatch Kingdom of Heaven, some nice trebucheting in that battle

Catapults in AoE II are so much fun with the 256x (or more) tech mod because they can become missile launchers. :D

Neither. Trebuchets are a bitch to construct since the math behind them is surprisingly complex, especially with counterweight ones. Catapults are just a giant stone thrower.
I'd go with a ballista or similar siege crossbows. They are usually more precise, have an extended range, and they do not take an eternity to reload.

It depends in what you're attacking.
If you're invading a castle, you will surely want the power and range that only the Trebuchet can offer.
If you are against an army defending a position then, by all means, you should have a lot of ballistas.
If it were me, in any escenario, I would go with both of them to cover any possible situation.
