LOTR. Twilight soundtracks also have some good stuff. Eyes Wide Shut has some great music too. And most of Jan A. P. Kaczmarek's stuff (Hachiko, Total Eclipse). And I'm probably forgetting something great.

Personally whenever I hear the lullaby theme from Pan's Labyrinth I immediately turn to jelly.
