For some reason i just can't seem to get into them, it's like basically just the grinding part in a rpg, and if it's alot of grinding in there, not many that would enjoy that either, but with roguelikes, it's without the feeling of any real progression, without a story, etc.
Basically it's groundhog day in a game.

To those that do like em, what's your appeal to them? What are your favorites?

Love them, but i get why people dont like it.

If i can make a sugestion, try Enter The Gungeon, amazing game, and in every run you won a new weapon or passive item.

Also, Dead Cells, amazing rogue-like metroidvania

rogue legacy (light), FTL, doomrl, adom, darkest dungeon, desktop dungeons, dream quest, risk of rain.

lots of games great in the category. Ofc there's more but no more free time unfortunately for me.
I'm probably forgetting a bunch of titles too. Graphics are not even important in this genre. It's all about gameplay and replayability while learning from your mistakes.

I like them if done right. Mostly by that I mean the procedural generation takes more than a random seed as input and has safeguards against truely unwinnable situations. Eldritch in particular does a lot of things right in that area, but you won't really notice it until you stop playing it like an FPS and start observing and learning how the worlds and enemies work. And then you start noticing that there's usually ways to avoid engaging in fights you want to avoid, tricks to deal with hazards etc.
It's a tough game and every failed run feels like a kick in the teeth, but it still mostly feels fair.
