If it works the same way as a GOTY game, you will have both the Legendary edition and the Skyrim you already bought activated in your library regardless of the DLCs you own.

So you won't get anything in your inventory I guess.

Apart from a very restricted number of games, duplicates never go to inventory. In the case it does, it is almost always said on the store page.

Horses probably will not assist you with your problem.
