Never really played quake, but I thoroughly enjoyed Unreal Tournament....especially with the Excessive Overkill mod ;o

biggest Quake deal i've seen is Quake collection for 50% off but it does include IV, wish there was a big id bundle at a reasonable price to get all these fantastic titles, Quake, HeXen, Doom, Wolfenstein one day maybe, manage to get unreal Pack for 75% which doesn't work out to bad for some of my favorite games

I own both UT 99', UT2k4 and Quake.
The question is, what are you looking for?
For multiplayer, your choice could be any of them. Equal to all of them though, is that their communitities are Very limited. If you are lucky, you can find one or two alive servers for each of these games.
For singleplayer, which would be the most likely reason to buy any of these games, I would certainly go with Quake, since it has a whole singleplayer campaign to play through, unlike the UT games, which only has bots.
However, you could also buy Unreal Gold, which is not to be confused with UT, which is the singleplayer predecessor to UT. This game has a singleplayer campaign with story and everything.
I find the game to be severely outdated though, and therefore i hold my favourite to be Quake. Quake has a bunch of Source Ports, of which I believe Darkplaces to be the best. Darkplaces makes it very easy to pickup quake and play it on modern machines without any problems, including the ability to have HD resolutions and change FOV.
Be vary if you buy Quake on Steam! Steam only includes the game files. Originally Quake came on a disk, which included music as well. If you had the Cd inserted while playing, the levels had music tied to them.
The Steam version, having no CD, therefore has no music while playing.
Thankfully, there is ways to aqquire the music files from the CD, and Darkplaces is able to use these files, therefore bringing the game's music back.

UT99 is the proof games don't need to be newly released to be immensely enjoyable. The games looks, sounds and plays great even 16 years after it was released. It also proves one doesn't need to be into multiplayer gaming to be able to enjoy an FPS.
Edit: Quake 3 was released at around the same time and was nowhere near the game UT was. I bought Quake 4 earlier this year and started playing the campaign. I didn't finish and probably never will. Too repetitive and uninspiring to justify my time.

I am no help here, but thanks for sending me on a nostalgia trip. I completely forgot about Unreal Tournament. I remember having a lot of fun back in the day in UT99. It's funny how you can pull up a youtube video and remember every weapon and map in the game when you haven't played it in over 10 years. I never played Quake and don't think I ever played any other versions of UT.

UT2004 is the best of the series. It fixed all what was wrong with UT2003 and still has nice graphics.
Quake 3 = Quake Live and is F2P nowadays and all you need if you want just the multiplayer. Try it before you buy sth. Quake 4 is bad, not that bad, but bad. 1+2 for singleplayer and a history lesson ;)

UT2004 - Note that the new one is available for download, and is quite promising. But it's not really finished yet.
Unreal Tournament and Quake are quite different beasts though.
Movement feels different (especially since UT introduced dashing), and UT gives many more options to master, with every weapon having an alt-fire.
Quake 3 on the other hand, feels bare in terms of possibilities. But it does polish everything it does to perfection, where UT is happy with a few flaws here and there.
Personally I do prefer Unreal Tournament just for the sheer variety it offers.

I have nothing but fond memories of Unreal Tournament. Every one of its sequels just didn't have the same charm in my eyes, but are by no means bad games.
Sadly, I cannot speak for Quake.

UT3 was a disaster upon release, but as of now it's still the best arena-shooter
Though UT2004 and UT99 doesn't grow old at all, as well
Quake is more a sport, than just a game. Not much gameplay variability, pure and simple fast-paced slaughter

I really enjoyed UT99 the most out of UT 99/2003/2004, I haven't tried UT 3. This could just be nostalgia talking though, but I did play much more UT99 than the other 2 combined. The sequels just never matched up with the original for me. The graphics of the newer ones obviously hold up better, but UT99 doesn't look all that bad.
While I did play Quake 1-3, and several mission packs, I did not enjoy them as much as Unreal Tournament. For solo play it was better, but I was much more fond of multiplayer. I believe I enjoyed the 3rd the most, though it has been a long time and it has really stuck with me as much as UT.
As another pointed out, the multiplayer servers may be deserted.

I havent played in Quake for quite a long time, but from what I remember Quake was: extremely fast FPS with ugly or unusual maps filled with a huge number of secrets, additional armor and live, etc. Multiplayer: Due to the time of the creation of the game, learning to play at a satisfactory level will be damn difficult because people had plenty of time to become a pro.
UT. Not as fast as Quake, but much faster than CS. A similar method of map building, and UT2004 and UT3 have set on more vehicles and extensive maps, which doesn't change the fact that these were also smaller. Much more graphically rich than Quake. Personally, I have with the series some good memories and with UT3 spent dozens of hours.

For me it's a bit of a tie. UT has some fun game modes, but there's nothing like doing a flawless rocket-jump in a game of Quake. Yeah... rocket-jumping was a thing before that darned Soldier got wind of it...

The best UT is 2k4, 99 is good also (especially in hardcore mode), both of them come pretty close in terms of movement to Quake 1.
Speaking of which, you might want to try Xonotic, it's a free software game developed by fans of Quake 1 and UT, it brings together the best features of both and it's pretty high on the competitive level (don't be surprised to get smacked around on the multiplayer servers). The community isn't large, hence it might seem there are few people on the servers, but hang around for ~10 minutes and somebody is bound to come.

There are a few factors.
If you want MP, then Quake Live. UT online scene is mostly dead. Plus it is the only classic shooter left that is still played competitively in the sea of Counter-Strikes and shiver console shooters. Also, if you come from console shooters, expect to suck a lot without all those crutches. In QL you actually have to aim. And fast. Don't expect the game to play itself for you.
If you want SP, then what kind of game type do you prefer. Quake is essentially nothing but deathmatch, mostly 1v1. Q3 is better against bots than Quake Live by a wide margin. Live is aimed at MP. Q3 also has tons of DM maps from the community. Just don't play team games. The bots are terrible at them. Plus they are kinda boring.
UT was always team-based in design, although even in its prime kids just played DM.
As for which is best UT…
UT '99's engine is very old and the mechanics are dated. It was awesome, but only in its time. Still, it has a number of awesome maps (the maps were so good that even modern games still steal from them) and the old-school weapon balance is good for casual play.
UT2k3… lets just say it never existed.
UT2004 has great bots, many downloadable fan content, really fast-paced game modes and a huge arsenal. My personal favourite, but many people don't like the Double Domination and Bombing Run modes, and the game relies a lot on them. Also, Assault is way too scripted, corridor shooter like.
UT3 looks the best and even has a (terrible) story mode, but all maps favour style over gameplay mechanics and many of them are too gimmicky for the sake of being gimmicky. The game was never picked up that much, but it is the closest to modern shooters. It is also the best pick if you like vehicle combat. They sure as hell milked the vehicle aspect to death in every game mode.

I have owned and played all of the UT and Quake games up until the latest iterations (Quake Live/the new UT coming out). It's pretty much as Talgaby said. UT offers more complexity and team-oriented variety, while Quake offers a faster and more "pure" DM experience. As of last year or so, there was still an active UT2004 community online. Despite what others have said, several of the UT games are single-player experiences (i.e. campaigns), but that is a different kind of animal.
If you want Quake, I'd try Quake Live. If you want UT, I'd go with 2004.

If you think it is not aged well (absolutely timeless) then you should not play arena shooter
its the same like cs -> source -> csgo / ut99 -> ut2k/3 -> UT3 -> UT Pre Alpha
no reason to play the newer if you can still play the old
