also less acetic than red ones. and you can use them in some interesting recipes.
if you want to keep it simple, just cut them into corners, fry em up from the sides that were on the inside of the tomato and leave the outer skin as is, then drizzle some olive oil when done, throw in some coarse salt and your fav chopped herbs, whatever they may be: tarragon, thyme, basil, chives, oregano, mint? doesn't matter what, just not all of them, keep it simple. Some light semi hard cheese, would be fine, something without a strong flavour

two other very popular recipes with a little more work are breaded fried green tomatoes (southern American fav.) and pickled green tomatoes, plenty of recipes for em online :)
