I would like to have game mixed between GTA V and DayZ, but based on DayZ (it would be more of a Walking Dead RP, where people live inside wall-protected communities and have jobs, people being more of a threat than zombies, politics between communities, etc..).

For me, the problem with single player mods is that they're single player.
The problem with gta v dayz servers is that some of them are not really well structured and presented, some are unoptimized and make the client lag, and most aren't complex enough to meet my vision of a perfect zombie rp server.
There needs to be communities systems in place (group/squad systems but at a large scale), big community wall systems with wall hp that can be damaged by zombies, ability to start a community from scratch and increase population with real players, etc..

Elder Scrolls Online and Lord of the Rings Online, both have a great lore behind but the first have nice housing, crafting and cosmetic systems that applied to LOTRO could convert this game in a dream game.
Also a mix between GTA V and Payday.

I played Wasteland 3 for the first time weeks ago, expecting it to be a combination of the turn-based tactics of XCOM and the role-playing & politics of Fallout: New Vegas. After playing for like an hour, I was sorely disappointed.
Now I admit I have not played W3 nearly enough to fully assess what it is and what it is not, but if my first impression was accurate, then it is not what I expected at all. In that case, I'd love an XCOM + F:NV inspired game. I'd sink 1k hours into it before I know it.

Man where do I start?
Red Dead Redemption 2˙s, gameplay mechanics, animations fluidity, Euphoria physics, realistic controls, NPC`s, attention to detail.
With Assassins Creed Origins story and setting,
and with parkour and combat from AC Unity.
And another one would be, Mafia 1˙s type of story and setting, realistic driving mechanics and good looking graphics,
with GTA˙s open-world activities, and story length,
with Max Payne 3`s combat and physics.

Final Fantasy 8(story) + Cyberpunk 2077(world & esthetic), basically something like FF7 Remake but even more futuristic.
or Final Fantasy 9(story) + Witcher 3(world & esthetic)

The Last of Us Setting with details of Red Dead Redemption 2 survival.
Alternatively, XCOM with Elder Scrolls, where you get a turn-base tactics and the character and lore that is fantasy. Overbranching characters and much more. I know Baldur's Gate 3 might scratch that itch, but I've not yet played it.
