With the deluge of indie games and mobile ports, it's really difficult to figure out which ones are worth your time and which ones are trash. Two games can have very similar "shitty sprite" aesthetics, while one has the story, gameplay, tight controls, music, etc, to back it up, while the other is total garbage.

Honestly, the game becomes really good and genius only near the end of your first run. Before it, it's not really that funny nor interesting. It is quite well written and if you want to experience the part where you bond with enemies, you can see a whole different side to that. It starts off weak and only as the new characters appear does it get more engaging, captivating even. I was approaching it with a lot of skepticism and even some negative expectations, but the game dispelled them well over the course of entire playthrough. Not to say it doesn't have its bad sides, over-reliance on not telling you how to progress through some of the encounters when you try to be pacifistic and such. But it is very solid.
I also found it funny that with all the anime-styled games coming from Japan and whatnot, it took this thing to actually get a game that feels anime in the best sense of the word. Especially the final stages are like the quintessence of good stuff you can find in animes, writing- and emotional-attachement-wise.

Play it before judging. Don't research any more than you already have or you'll surely spoil the game for yourself.
Also, isn't it ironic that you're assuming Undertale is a shitty sprite game. And yet you have 26 hour on Enter the Dungeon and your favorite game is Stardew Valley, which looks like a shitty RPG Maker game.
Even then, I'd still want to play Stardew to see what all the fuss is about.

It's not ironic, emphasis on shitty not sprite. I don't mind bad/old/retro/whatever graphics at all, I just want my game time to be enjoyable and fun. From what I gather from the Undertale store page, it looks like neither to me. Not to mention that if I do play it I'll go with extremely high expectatives from the comments and reactions I've seen, so I'd likely be hugely disappointed.

How can your exceptions be high if your opinion is negative? This is the exact mind set I've had when I was a teen who only played 8-10/10 games. As I grew and started to build my own opinions, I didn't care for hype. At most it would get me curious to play a game.
Lost Odyssey, for example, never got my interest because I didn't like turn based RPGs. I decided to play it since my friend gave me it as a gift. In a nutshell, it was one of the best games I played on the Xbox. I'm not saying you will enjoy Undertale, all I'm saying is to try it or any game you have doubt on, before you make an opinion.

Because if a game/movie/book has extemely positive reviews I will judge it with a harder criteria than if I know beforehand that it's shite or mediocre. If I'm consciosly going to play something that it's not that good I'm able to overlook many of its flaws due to the fact that I don't expect it to be great, but if it has received such a high praise as Undertale does I'm gonna be nitpicky as hell.
I play many types of games, not only 8-10/10 ones, firstly because gaming journalism is a joke and secondly because I acknowledge the fact that I can enjoy a flawed product, take the example of HotS, if you were to ask me, I'd say the game is mostly shit and I'd recommend you stayed away from it, having said that I enjoy playing the game and have nearly 1,5k matches, I do also like to form my own opinions and not blindly parrot whichever opinion is the popular one.
Playing offline and/or DRM free versions is a thing, you know? :-p, e.g I have more like 40 hours on Enter the Gungeon and like 50 on Stardew than the ones listed on my profile

I'm an amateur streamer. The Dark Souls stream netted me 30 concurrent viewers, which is a lot, considering I stream lesser known games. But with Dark Souls they just kept backseat gaming, but at the same time a lot of them were friendly and helpful as well. I have mixed feelings for them. Also, the "Git gud" thing is a joke, so no real beef with that.

With comments like "GIT GUD" and continuously calling it one of the hardest games, as if you need specific skills when the point of the game is tactical thinking and pattern memorization, i wonder if this people actually played the games.

The difficulty or the franchise is highly exeggarated indeed. Especially DS3, which felt much easier than all the other 3 iterations on Steam (included SofTS as a seperate entry). I've never played BB, so I can't comment on that.
Although on the storytelling we have different opinion, while there's no straightforward narrative, there's a pretty big lore hidden in item descriptions.

Ive read the lore, its really the best way to create some background. The point is, there is Lore and there is Plot. the creation of the world and the events that took place before and after the player has entered the world have always been fine.

A person who makes reaction videos about "cringy" people. He makes videos basically about stuff that is either completely horrible or stuff that's harmless and quite a bit of fun for the original creator's fans. He even pretends that "roasting" people (not really roasting, mostly just insulting with no wit) is satire.... Even though there are multiple creators that have shown him that what he does isn't satire and only can be considered satire if you blur the lines so much that the whole vision is just a line.

For Steam Greenlight - the reason it's listed because I've roped them up into a bundle so to speak. I'm speaking on the people who are upvoting a game that's questionable in quality to be put on the marketplace. That's why you practically see so many crap games sold for pennies in the hopes that you're buying their game and trying to not give you a reason to bitch about it even though it was dirt cheap.
Notable examples are the Dad Simulator 2015, What's That Under Your Blanket? etc. All of these games are just a $1 but oh my god is their quality so horrendous and the people around them literally defend them. I may be labeled to be humorless because most of the time, their arguments to defend these games are "well, they're released for a good laugh and for your friends to give you awkward looks". It's not worth real money to me for all of that.
So, that's the point I'm trying to get at.

Oh fair enough, I get ya. I mean, those games aren't really horrible, since you know what you're getting and the price is cheaper than a packet of crisps. But what I hate is the crap that actually comes out. The games that are buggy and incomplete with prices too high to even consider. The constant censorship on those forums usually doesn't help and the bribes on Steam Greenlight, like "Vote yes and you'll get a free copy!"

Believe it or not but there are still people playing that. I've played the Dayz mod for about 600 hours, was there from the beginning even played some sessions with Dean Hall on the Balota Buddies servers.
Stopped playing at some time because it got too mainstream and it started to feel like a kill on sight simulator. When the standalone came out I got a copy from a friend but it was a giant step back from the mod.
The die hard fans can't stand it if you say something bad about their precious "game".

In my opinion, it would be Blizzard. I know it sounds hypocritical with Tracer both as avatar and steam name, but I swear to god that my interactions with the blizzard community have been dissapointing at best and downright infuriating at worst. It's just people singing praises towards them and treating Blizzard as if it was literally the 2nd coming of Jesus.
