+1, a bit intimitating at first, but it can do all you want, to control the speed of fans(if they are pwm), to make noise or shut down you computer if themps get betwen a range.

It depends, I've used them all at one point or another and occasionally still do but my usual free fallback is HWMonitor.
Just going by what is mentioned here so far:
Speedfan's sensor readings haven't always proved as reliable for me. Aida64 (formerly Everest) costs money if you want all the whistles and bells which aren't required unless you're trying to get to the root of a specific problem. And most other things show less info than HWMonitor (especially the min max readings over time usually aren't present).

Haven't really checked the temperature of any components back when I had a laptop, but I think I should do it with a custom built PC. However, I've never really used any software for that, so I was wondering, what do you guys use?
EDIT: Downloaded HWInfo, it's really useful. Thanks for all the suggestions! I'll keep this open for the ones to come with the same quest :P
