Man, I get skipping over less standard dishes, but you missed a lot of the basics: Roasted potatoes, potato soup, potato stew, scalloped/au gratin potatoes, hash browns, potato chips, potato skins, gnocchi, potato bread.. and, most importantly, you missed potato pancakes, and I'm pretty sure excluding those is a form of culinary blasphemy. :|

My favourite is gratin dauphinois. With leg of lamb and sauteed string beans is a delight.

Don't know if this is more of an Irish thing or not, but we quite often end up having Mashed and Roast potatoes in the same meal. So damn tasty.
