Definitely missing "I am the girlfriend" option :P
I played coop with my boyfriend: Dungeon Defenders, Magicka, Trine 2, Orcs Must Die! 2, Saints Row: The Third, Saints Row IV, Lara Croft and the Guardian of Light, Dead Island and some LEGO games. I could recommend for her Telltale games, Lego games, Tomb Raider, some point and click games like Broken Sword or Deponia, Never Alone, Torchlight II, Life Is Strange, Oceanhorn: Monster of Uncharted Seas and Dreamfall Chapters.
I must admit that some games are also (more) enjoyable for me to watch while someone else is playing so I watched him play some Batman games, Assassin's Creed, Mad Max and Just Cause...but as Mullins already said it could be because he is better at those games so it's less frustrating for me to watch and enjoy the story.

Bastion, Child of Light, Prince of Persia series, Assassin's Creed series.

My girlfriend usually plays adventures and hidden object games, and sometimes a RPG like The Adventures Of Van Helsing but i'm sure that the game she loves is Terraria (alone and multiplayer). She also has played a couple of FPS (Day Of Defeat and Call Of Duty) but usually to play with me.
Ahm, she really hates MOBAs and strategy games.

Mine will play Hearthstone with me, and Left 4 dead, she rages when she loses in hearthstone though its pretty funny. Then she will play are you smarter than a 5th grader on the 360 as well. think that's about it

I don't have a girlfriend at all, and that's ok, because I'm a heterosexual girl.
Anyway, you could probably try some nice adventure games. If she's into something deep, I'd suggest, for example, Sunset or Brothers: A Tale of Two Sons. Grim Fandango, that's been remastered recently, has probably the best story I've ever seen in games, but it's possible it'll be too hard for a newbie (but it got me totally hooked when I was a beginner as well). The Longest Journey looks a but outdated, but it's an amazing (and totally girlish) fantasy/sci-fi point-and-click adventure. Its sequel, Dreamfall, is nice as well, also much easier to play; haven't seen Dreamfall Chapters yet. I actually think that Life is Strange is heavily overrated, but it can turn out to be a good place to start.

Things like Stardew Valley/The Sims can definitely be addicting.
The Walking Dead
Scribblenauts Unlimited
Bastion
Portal 2
Papers, Please
I also highly recommend Ibb & Obb, co op is so much fun! The controls/timing get a bit harder as you go on in the game but still not that bad. Also Battleblock Theater is fun co op without being very punishing.
I mean as long as she uses a computer, I doubt she'll have that much trouble getting into most games. I think the only thing I'd stay away from at first is ones that need wikis/memorising recipes.
I got into games when I was 4 by playing Super Mario 64 with my dad, and continued to play a lot of Nintendo games. Played MMOs at a decently young age as well and didn't have much trouble starting out either. A lot of the fun is trying different genres/seeing what she's interested in, if anything I think what would put her off is the number of games available to play that can be a bit overwhelming when you don't know where to look.

Never Alone has a nice story, easy controls and good coop (and singleplayer). It's a good game to get into the gaming world, but I have to say, in this day and age, if she's not already game-curious, you're probably going to have a hard time changing her into a gamer. Doesn't mean she won't enjoy games, but don't expect any deep gaming sessions.
As others have mentioned, the telltale games have good story and is very forgiving. The LEGO games are fun, and nice for playing coop in as well when you're together.
My wife's more of the altoholic MMO kind though, so not basing it on personal experience. She did enjoy Never Alone when we played it together on PS4 though, and she doesn't like platformers normally.

Girl here, so.
I'd go for Ori (need to buy this when it goes on sale), and Oceanhorn (this game looks so cute ;3 ). I liked playing Bastion too (need to finish this).
If you want her to play more co-op maybe Torchlight? First one is cool for playing alone and you can get the second one to play with her. It's not too bloody and monsters look fun.

Hide the banana..... :c
but srsly, idk... if she is into shell like anything, so good games, shadow of the colossus. if not things like LoL or CS:GO grab ""casual"" girls easily..

I'd say the hardest part of getting a girlfriend into gaming is getting used to using a controller/keyboard & mouse to control things.
I got mine into gaming using Portal 2 and an N64 emulator (playing Ocarina of Time was a huge boost). Once she had played those two, she dove right into playing Mass Effect with me and is currently on her 2nd playthrough. I find it helps when they have a cohesive story and something she can relate to, so games like Terraria might not be the best idea to start off.
Luck!

I mean, the truth of the matter is, if someone's not (yet) into gaming, you need to find a game that piques his/her interests. doesn't matter if it's a boy or a girl. One easy one is, my partner is very into the walking dead tv show. when I mentioned the game, I got a very derisive response. But, because it's all story driven, the gameplay is straightforward, and the interest is there, we'll try it (at some point). From there, I'll bring up some other telltale games. And if that works, great.
If not, well, we have a TV.

My girlfriend has recently stuck her feet into the pool of gaming so to speak, and is splashing around a bit. She started off by watching me play Witcher 3 and was really into that but when I offered to let her play for a bit (to walk around Novigrad and talk to people for example) she declined and said she liked to watch me play it more.
I did some research for local co-op games we could both play together and game across Lovers in a Dangerous Spacetime, Lara Croft and the Guardian of Light, Trine 1 and 2 etc she very much enjoyed those
But now I would like suggestions for good offline singleplayer games for her to play on her own on her laptop. Games that have a good singleplayer experience, and ones that aren't hard or confusing for players new to video games. Also preferably ones that aren't dark/scary/bloody
So far I've come across as likely candidates
Terraria
Stardew Valley
Slime Rancher
Rayman Legends
Oceanhorn Monster of Uncharted Seas
Ori and the Blind Forest Definitive Edition
Crashlands
