Game is not available in my region, will I be able to redeem the key anyway? (If it even is a key)

It depends. If it's a region locked Steam key, you won't be able to redeem it.

If it's a game bought on Steam and gifted through your inventory, you should be able to play it no matter if it's locked or not.

You might be able to redeem but never play. I have shogun 2 and will never be able to run it unless I visit Russia.

Thing is, I have been gifted L.a Noire from a friend before, which also isn't available in my region, and that worked fine. So hopefully all goes well. (If I even win it :p)

Usually yes, but with some games in some regions (east asia) then no.
