Neuroshima Hex is good. Stratego is nice. Carcassone is a nice family game.
From bigger games - Game of thrones - it's awesome. Arkham Horror - amazing. Mansions of Madness - amazing. Ciclades - great game, good for family either. The Adventurers - really funny game. Battle Star Gallactica - great game about human relations (and droids).

For two players who enjoyed Stratego I can highly recommend Confusion. You have to take a briefcase from the center of the board to the enemy's side. The catch: you don't know how your own pieces move.
For groups I can recommend Castle Panic (easier) and Pandemic (harder). Castle Panic has the group trying to defend a castle from Orc, Troll and Goblin invaders, and is a lot of fun for older kids (I'd recommend at least 8+). Pandemic has the group trotting the globe trying to clear several deadly diseases before outbreaks lead to a game-losing epidemic.
For highly competitive groups there are a LOT of games I can recommend. Ticket to Ride has the players trying to connect particular cities via trains to score points. Power Grid has the players buy power plants while expanding city coverage in an effort to power more cities than the other players. Wasabi! has the players complete oriental-themed dishes to earn points and wasabi cubes before the cooking surface is filled. Legendary is a newer game that has the players cooperatively kill a supervillain while trying to earn more points than all the other players. Ascension is a card-based, deckbuilding game where the players earn points by killing spawned monsters and purchasing powerful creatures and constructs.

Since you like Munchkin I would recommend looking into:
Anima: Shadow of Omega - Revise Edition
Anima: Beyond Good & Evil
Anima: Twilight of the Gods
That being said... the instructions aren't the best and I found a couple of issues with the Twilight of the Gods set (wrong gender symbol for example) but nothing that common sense can't handle dealing with appropriately.
Parts of the sets can be mixed with the others similar to Munchkin so owning more than one set can be a good thing. Unlike Munchkin it is limited to just these three sets and most likely will not end up with anything more created for it. That isn't necessarilly a bad thing considering just how much stuff Munchkin has.

thunderstone - card-game, a bit like dominion, but with dungeons and fighting and pretty card graphics.
chaos in the old world - interesting, warhammer fantasy related strategy game with 4 different god-character to play.
Space Hulk - Death Angel - pretty cool card-game. cooperative, warhammer 40k setting. space marines have to clear an big "empty" ship from enemies and find artifacts.
Space Alert - cooperative space-ship game. group has to work together to save spaceshuttle from incoming enemies and environmental danger.
Red November - funny cooperative game. somekind similar to space alert, but little gnomes on a submarine ;)
Frag Gold - ego-shooter. deathmatch. like quake or unreal tournamet but offline and on board. simple-just-for-fun-game.

Munchkin is nice yes.
I particularly enjoy resource based, strategy board games like:
Dominion, Puerto Rico, 7 Wonders
Also Ticket to ride is a nice and simple game. Just build the longest roads or do your mision for points.
Honorific mention for the game that will make you think you and your friends are high: Dixit , Which is so fucking hilarious to play trying to guess the card

Monopoly Deal Card Game is a good one to have on hand. It's a quick 10-15 min per hand game once everyone learns the rather easy rules. It's good for those times when you're waiting for everyone else to show up or the host is setting up a complicated board game.

Personal favorites of mine include: Betrayal at House on the Hill, Kung Fu Fighting, Al Hambra, Stone Age. Do not forget Apples to Apples or the more adult version Cards Against Humanity
as mentioned: Puerto Rico, Carcassonnee (spelling), the Quarriors games are great too. Risk 2210 over the regular variants is a quicker game.

Already mentioned above, but I'll mention it again: Pandemic. It's a cooperative game where you work together with the other players to cure a pandemic. It's a nice change from all the games where you work against each other :)
Also: check out the TableTop YouTube videos by Geek & Sundry, if you haven't already. Wil Wheaton gives some info about a different game each episode and then does a playthrough with different players. It gives you a good idea of what the game is like.

Arkham Horror is my favourite game, is a straight coop game, you probably should play this if you are a fan or like the universe of Lovecraft and if there isn't a "leader" in your group (just to avoid that one persone rule the entire team). Watch out: long play sessions (usually +3-4h)
If you want a coop game with a twist I'll suggest either Battlestar Galactica (you will enjoy it also if you aren't a fan of the tv series) or Shadow Over Camelot.
If you like more Strategy I can suggest Agricola, Le Havre for longer play sessions, Race for the Galaxy or Kingsburg for shorter ones. Uh, also 7 Wonders if your group is huge (6-7 people).
If you are more into war (NB: I prefer fantastic over historical) you should try either Runewars or Starcraft: the Boardgame.
If you want more party games try Bang (they produce it in my city :D), "Aye, Dark Overlord" or Citadels. and Dungeon Fighter!
I play a lot of boardgames actually so I can't list them all, but you should find something that appeal you in the list above! If you give me more precise detail I will try suggesting other games that fit :P

I'm really into Board and Card Games at the moment, just winning a game of Epic Munchkin only 20 minutes ago.
Also Small Worlds is awesome to play as well, and Settlers of Catan.
Basically anything that was played in Big Bang I own as a general rule of thumb.
I've organised a gaming evening once a month now and looking to expand my collection.
Does anyone have any suggestions?
