TES: Morrowind and Oblivion. I've never been a huge fan of the Skyrim OST, but I love the ones from the previous games.
Other honorable mentions: GTA:SA, GTA IV, Fallout, Bioshock.
And I forgot the best of them all: Alice Madness Returns. The music is really 'dark' and beautiful.
