as i live in berlin as well i can tell you, you can create an amazin g carbonara here as well^^ we have good shops where you can buy guanciale to make your own carbonara^^
but may i ask how you cook your carbonara?

Actually, keep it very simple: you just need guanciale, pecorino, pepper (loads of pepper imo 😂) and one egg for each person ( I usually use the entire egg, but some of my friends may like to add like 4 entire/one yolk ,it's up to you).
You want to cook the guanciale in a fry pan, no need to add oil neither butter. Make it crispy, but not overcooked.
Then boil and salt water, cook pasta - rigatoni or spaghetti would do - and in the meantime beat the eggs with pecorino and pepper, maybe also a pinch of salt, but be careful as the guanciale is usually very salty.
Drain the pasta al dente (remember to save a little bit of pasta water to help you make the cream) and put it in the fry pan with the guanciale a minute or two.
And then, you put everything in the pasta pot again with the egg mixture and mix. You may have to use a little bit of the water you saved before. (IMPORTANT: The gas has to be switched off. We want to make a cremy sauce, not an omelette, keep the eggs almost row.)
ADD MOAR PECORINO, MOAR PEPPER
So, again:
- Do not add cream/butter/milk/ stuff, keep it simple, as grandma would do
- Do not overcook the eggs

once i tried carbonara with pecorino but i found it too salty as the bacon makes it salty enough? cant remember if i used guancale or panceta. so i siwtched to parmigiano or grana padano^^

Never switch to parmigiano! Try to put less salt in the eggs or in the boiling water! That cheese makes all the taste of the cream!
Also, someone (not around Rome) uses pancetta when guanciale is not available (it's not like Amatriciana where you MUST use guanciale, otherwise a grandma will beat you) but there you might want to use a little bit of oil when in the frying pan because it has less fat.

I would probably have the only avatar showing the rank of "private" in your whitelist (despite my never having been in the military). Most people who choose rank avatars usually go for something higher.
Also, I love the old Civ games and got way too many laughs out of the "1,000 ways you know you have been playing too much Civ" list. :D
I can safely say that in one year I had three 400+ hour Civ 3 games. :O
I try to give away as much value as I win, and need to give more away soon. I only give away "leftovers" (stuff I don't want from a bundle I buy for myself), as opposed to buying large quantities of games to quickly level up.
I really like trains--especially steam engines--and some train games (Railroad Tycoon 2 comes to mind :D ).
I have a coin from the year I was born, and I love reading.
