So its been a long time since Ive used this site. I created giveaways and people won. I entered the key when I created the giveaway, and I clicked "Send Key" and it put a checkmark next to it. Does it send the key to them automatically, or do I actually have to email them or add them on Steam?

you create giveaway,
you put key,
SG choose who is winner,
after this you go https://www.steamgifts.com/giveaways/created
and push "send key"

If you choose this option, you will be required to enter one or more Steam keys when creating your giveaway. Once your giveaway is complete, you'll be able to see your winner, along with their email address. You'll notice the key you previously entered is displayed next to their username, along with buttons to modify or delete the key if necessary. At that point, the key will not yet be visible to the winner. They will only be able to see the key on our site when you check the "Send Key" checkbox. If you uncheck that box at any time, they will no longer be able to see the key. An icon with an eye will appear next to the key once it has been viewed by the winner.
If you create a giveaway for 50 keys or greater, the "Send Key" checkbox for each winner will be automatically selected. This means the keys will be instantly available to your winners the moment your giveaway ends. This is done to make the experience more convenient when managing giveaways with a higher number of keys."

u welcome,Putkey in SG also little bit protect you from bad people,
because if winner view key then you have PROOF in SG (eyes icon) that winner see it.

But if you send in email is Wrong ,
because winner can cheat you ,
him can take your key and sell it for money
or can use it in other account and then him can say you never give key to him (Lie)
Then moderator SG can't verify\know who lie you or winner?!?

But if you put key in SG,then moderator can know winner see key already,so if winner say you never send key,moderator know you say truth,and winner lie.

I created a giveaway, and it ended and selected a winner, but I don't see an email address for the winner. Is Steam contact via Friend Request my only option?

When you select that particular giveaway and go to its page you should see some links on the left hand side under the heading Giveaways, i think they are "Comments", "entries" and "Winners", select the link that says "winners" and it should give you the winners username and email address right next to itt

That's correct, but e-mail is useless, you can't send a gift via e-mail anymore.

If this is a quote from the current FAQ or Guidelines, than they need to be updated (I mean, you can still see an e-mail address, sure, but this information is useless and probably should be removed). Yes, unfortunately, buying a gift to a Steam friend directly is the only option.

I always assumed it was more for the indiegala and humblebundle giftlinks for which you do need an email address to send, completely forgot about gifts purchased on steam

RIght, Nigel, this is a HB situation.

And thanks, with your directions, I finally found the winner's email address right there under their name (and feel like a doofus for not having found it myself).

I've emailed the winner the HB link, and now I just hope they don't mind using HB to get their game.

In hindsight, I should have specified in the Giveaway description that the winner can expect an HB link.

Why not reveal the key yourself and copy-paste it?
Or add him and send him the link on steam?

(try to avoid links as Hb is.. sensitive.. a few are ok but a lot might get you or someone claiming them in trouble)
