Skyrim!! I don't enjoy fishing just for the sake of it, but in Skyrim it's somewhat tied into quests, cooking and alchemy, which makes it fun.

I dont think ive ever played one...do those flash games-ish mini games count, where u hit the relevant button when the meter indicator reaches the right spot? ...probably not. I'll probably not enjoy solo fishing games, as I need a good narrative or proper purpose as to why im collecting imaginary digital fishes.🙄

Already mentioned, but it's the only one I played: Sega Bass Fishing. Quite nice. I'm hoping to try Ice Lakes some day.
I also liked the simplified mechanics of fishing in LOTRO but that's not a fishing game, it's fishing in a game, which I guess it's not what you want.

Chantelise has an extremely satisfying fishing minigame. (Not sure why I liked it so much; I just did.)
