Well how much could they change gameplay wise without breaking the game?

This is whats new:

• Tournament mode
• Ranks got renamed, its now bronze - silver - gold - platin - diamond - champion instead of prospect - challenger - rising star - champion
• A whole lot of options to refine your controls such as dodge deadzone, ground and aerial sensitivity etc.
• Training mode, practice certain shots and manouvers and/or create your own training packs
• A new gamemode called Dropshot, keep the ball off the ground to avoid the ground breaking apart and create holes that act as goals
• The option to turn of unlimited boost in freeplay
• A whole lot of visual options like colorblind mode, nametag size etc.
• More custimizations for your car, banners that display your name when you score, supersonic speed trails and goal explosions
• General optimization
  And much, much more...

Not sure how much of these things you already know but most of these changes should have happened after they introduced crates and changed the ranks.
