Chronological by release, SoC, CS, CoP.
In this case I would also recommend playing SoC first, probably even followed by CoP instead of CS.
Weapon upgrade wise, you can really see how it was develop throughout the 3 games, but CS is pretty linear on the later levels, one of the reasons I sugest playing that one as third.

Borderlands. It'll take hours to complete the game, but then there's the other gameplay modes, then the different characters and DLC missions. Could be 100+ hours...lolz
