Tried EVERY possible combination of format even though Jimbo said the format is dd/mm or mm/dd.
Double checked time zones, tried different seperators (, . / -) but nothing is working out.

That's the only one that works actually. I tried dd/mm and mm/dd but only the one with the day in numbers and the month written in full worked. Now I've got to work out the right format for the time...

All solved, but the sgtools link doesn't work, even with dashes in the correct spots.
I was apparently second to solve it.

I found the error...
You made a mistake with your own cake day. It's 1 day earlier than the answer that is required!
Explicitely checked it down to the exact date and time and your cake day is the day before the answer.
